At the Banko Gotiti washing station, over 650 local farmers deliver their freshly picked cherries for processing. The cherries are fermented for 36 to 48 hours, depending on the weather. After fermentation and pulping, the coffee is washed and dried on raised beds for 12 to 15 days.
The parchment is regularly turned during the day for even drying, and covered between noon and 3 PM to protect it from intense heat, as well as at night to shield it from rain and moisture.
This is a classic washed Yirgacheffe - floral, citrus, elegant and very clean.
As the cup cools, you get a beautiful layer of apricot and black tea taste that bring depth to each sip.
This is perfect for an easy going weekend morning pour over.
Brewing Recommendation
- We roast light and expressive. Our recommendation for coffee to water ratio is 1:17 ratio.
- We recommend trying 92C-94C water temperature for any manual dripper.
- Freshly roasted coffee contains CO2. Allowing it to rest for 2–3 weeks will reduce the gas and will help the flavours open up.
