German has been growing coffee at his Finca El Roblar for twenty years.
German is a third-generation coffee grower carrying on the ancestral tradition of producing coffee.
During the height of the harvest which usually occurs in October and November in this part of Huila, the family hires ten local pickers to carry out the hand selection of the coffee cherries.
German placed 4th in the Copa de Oro last year with his pink bourbon, which was first fermented in cherry for 12 hours, de-pulped, then fermented in bags for 24 hours. The coffee was then rinsed and dried on zarandas, which are sieves and also a type of raised bed construction.
We feel very fortunate to purchase German's coffee from Huila this year and be able to share it with you. Enjoy the notes of blackberries, plum and caramel in the cup.
Brewing Recommendation
- We roast light and expressive. Our recommendation for coffee to water ratio is 1:17 ratio.
- We recommend trying 92C-94C water temperature for any manual dripper.
- Freshly roasted coffee contains CO2. Allowing it to rest for 2–3 weeks will reduce the gas and will help the flavours open up.
